Embark on a South American culinary tour of Argentinian cuisine through a five-course tasting menu. Crafted by your talented Chef and Host Hari Cameron, this event will feature reserved Sposato wines presented in detail by winemaker, Eduardo Nogal. An elegantly guided opportunity to taste, converse, and fulfill your senses in the flavors of Argentina. Guests will also receive a gift Jar of Dulce De Leche!
Starter:
Sparkling wine from Sposato paired with provoleta (skillet cheese fondue) served with crusty bread and Argentinian cheese puff.
Menu:
First Course: Tuna empanada with avocado sauce
Second Course: Bay scallop ceviche with olive, tomato, and tostada
Third Course: Ñoquis del 29 (Gnocchi) with chorizo and el tuco sauce
Fourth Course: House Aged Picanha Steak with salsa criolla, chimichurri, and alubia blanco beans
Fifth Course: Chocolate Alfajores with Dulce de Leche, Foie Gras, Coffee
Pairings:
1 – First:
Sposato Sauvignon Blanc Reserve, Variety: 100% Sauvignon Blanc.
Vinification: Fermentation in stainless steel tanks. Malolactic fermentation in part of the wine. Aged: 8 months in French oak barrels.
Tasting notes: It has yellowish-greenish hues and aromas of fresh fruit, such as lime, grapefruit, rue, and menthol herbs. It’s a delicate wineidity, a persistent finish, and elegant ac subtle oak.
2 – Second:
Sposato Rose Reserve, Variety: Blend of Malbec, Cabernet Franc, and Pinot Noir.
Vinification: Co-fermentation of Malbec and Cabernet Franc in a stainless steel tank, then blended with Pinot Noir. 100% Malolactic fermentation. Aged: 8 months in American and French oak barrels.
Tasting notes: Pale pink, red fruit aromas balanced with citrus and menthol herbs. Soft and fresh on the palate, with elegant tannins and medium acidity.
3 – Third:
Sposato Reserve Pinot Noir, 100% Pinot Noir.
Vinification: Cold maceration for 5 days, alcoholic fermentation in stainless steel tanks, ending it in 2nd, 3rd, and 4th use barrels. The wine is aged for 8 mo.
Tasting notes: Ruby red color with violet hues. Medium intensity. Red and black fruit aromas such as cherry and raspberry in balance with the chocolate and vanilla provided by the barrel. In the mouth, it is a delicate wine with medium tannins and acidity. With fruity and balsamic flavors.
4 – Fourth:
Sposato Malbec Reserve, 100% Malbec.
Vinification: Alcoholic fermentation in stainless steel tanks with a total maceration of 20 to 25 days.100% malolactic fermentation. This wine is aged 12-14 months in French and American oak barrels.
Tasting notes: Intense violet, red color. Red and black fruit aromas stand out. The oak provides vanilla and roasted coffee in balance with the fruit.
5 – Fifth:
Sposato Sabia Savia, Variety Red grapes blend (Malbec – Cabernet Sauvignon)
Vinification: Harvest in optimum maturity. Micro vinification 50% in new French oak barrels and the remaining 50% in stainless steel tank, using Indigenous and selected yeasts. Aging 24 months in 350 liters tonneaux barrel of first use.
Selection: This wine is obtained from a selection of the best plots of our Agrelo vineyard and the best varietals and barrels of each year.
Tasting notes: Deep red color. Aromas: An extraordinarily complex nose that reminds of red and black fruits, white and black pepper, licorice, menthol, eucalyptus, and finely roasted aromas of coffee, tobacco, and chocolate. Mouth: An intense and silky entrance. Complex flavors of plum, raspberry, and currant, along with spices such as pepper and anise. This is a full-bodied, creamy wine with great personality and elegance.
